  • It was in 1992 that Le Burgonde was created in Nolay in the shop of a rather odd antique dealer. Jean-Noël Aprikian offers cuisine based on the land, according to the teachings of the Cuisineries Gourmandes. An example: brochette of pike perch and marinated duck fillet with gingerbread.
