From the Greek, which means "the inclination of the earth towards the pole", a perfect name for a declaration of love to the vines, to this fabulous terroir, to these slopes like the one that leads us from the village of Puligny to the hill of Montrachet and of course a wink to our climats of Burgundy hailed and recognised by UNESCO! A namesake that is very dear to us in Burgundy and our ultimate reason for being. A more muted but luminous atmosphere with Art Nouveau touches and the treasure cellar that sits amongst the tables.
The cuisine of the Burgundian Chef Lionel Freitas is passionate, creative and free and sublimates the wines of the House of Olivier Leflaive and our colleagues from all over the world with always the same philosophy: follow the seasons, find the right combination, the right product. He favours the short circuit with the best local producers in order to work responsibly.
