The Gault & Millau Burgundy-Franche-Comté Tour 2026

At the launch of the 2026 edition of the renowned Gault & Millau guide, dedicated to gastronomic excellence in the Bourgogne-Franche-Comté region, Rudy Villien, head chef at Le Charlemagne in Pernand-Vergelesses, was honoured with the title of ‘Grand de demain’.

A native of Burgundy, he first made his mark at Le Cèdre, working alongside Christophe Canati at the Château de Chilly in Villerest, before returning to Le Cèdre to work with Christophe Ledru; he then set out on his own in Pernand-Vergelesses in 2021.

First working alongside Laurent Peugeot, then taking the helm on his own, his cuisine draws inspiration from Japan, demanding rigour and precision.

The Gault et Millau Burgundy-Franche-Comté Tour 2025

Finding that hidden gem is no mean feat. Just 40 minutes from Dijon, the awards ceremony for the 2025 Gault et Millau Tour Bourgogne-Franche-Comté took place on 30 June 2025. The event recognised four local restaurants and showcased the culinary expertise of a region brimming with talent and passion.

1. La Table de Levernois: Lucas Chambfort wins the “Pâtissier” trophy

At La Table de Levernois, already renowned for its culinary excellence, it is Lucas Chambfort’s talent for desserts that has been recognised by Gault & Millau. By winning the “Pâtissier” award, he has cemented the restaurant’s place amongst the finest establishments where dessert is an exceptional experience.

His expertise in chocolate and his creations showcase local produce with a creativity that makes all the difference.

2. Ed.em: Edouard Mignot wins the “Terroir d’exception” award

When the “Terroir d’exception” award is announced in Chassagne-Montrachet, the Ed.em restaurant stands out thanks to its chef, Édouard Mignot.

This is a wonderful accolade for this passionate chef, who brings out the very best in local produce. In his dishes, the chef uses local ingredients with great inventiveness to create unforgettable flavours of the region.

3. L’Alentour: Tatenda Mende takes home the “Young Indoor Talent” trophy

It is not just the kitchen that is in the spotlight; the dining room is also taking centre stage. Winner of the “Young Talent in Service” award, Tatenda Mende from the restaurant L’Alentour in Beaune showcases the art of service.

This award recognises his keen sense of hospitality, his knowledge of food and wine pairings, and his ability to create a unique atmosphere through his professionalism and enthusiasm.

4. At the Clocher: Rémi Genot brings the “Young Talent” trophy back to Pommard

It is not just established chefs who take centre stage, as demonstrated by Rémi Genot from the restaurant Auprès du Clocher in Pommard, who walked away with the “Young Talent” trophy.

This award recognises his creativity, his respect for ingredients and his ability to showcase Burgundian cuisine with a fresh, modern twist. It points to a bright and promising future for this passionate young chef.

The 2025 award winners are every bit as good as the top restaurants that have already been honoured, such asÉric Pras of La Maison Lameloise in Chagny, who proudly retains his toques.

But there’s no need to worry: other establishments in the region have also been awarded the prestigious Gault & Millau toques in recent years, proof that the Pays Beaunois is a breeding ground for talent.

1. Le Clos du Cèdre

A 19th-century winegrower’s mansion, just a stone’s throw from the town centre and the famous Hôtel-Dieu – Hospices de Beaune, opposite the ramparts; isn’t this the ideal setting?

The gourmet restaurant Clos du Cèdre, already awarded one Michelin star, proudly bears the Gault et Millau ‘table de chef’ (2 toques) accolade for Chef Jordan Billan’s cuisine, which blends local produce, passion and inspiration.

2. Olivier Leflaive and his two toques

Situated in the heart of the wine capital, a stone’s throw fromthe Hôtel-Dieu – Hospices de Beaune, Loiseau des Vignes proudly displays its accolades: it holds the‘Vignobles & Découvertes’label, has been awarded a Michelin plate and is recognised asa ‘Table Gourmande’with a Gault & Millau toque.

At the helm of this exceptional establishment is a top-class duo: Chef Alexandre Dutat, awarded two Gault & Millau toques, orchestrates a refined cuisine deeply rooted in the local terroir, whilst Éric Goettelmann, head sommelier and winner of the Meilleur Ouvrier de France title in 2019, oversees an exceptional wine cellar. Together, they invite you to discover Burgundy, from the glass to the plate.

With its four wine bars, elegantly set within an oak setting and offering up to 32 wines by the glass, Loiseau des Vignes showcases the full extent of its oenological expertise.
